The Terrace in the Sky restaurant in Manhattan was the venue for an elegant New York wedding celebration.
The bride asked me recreate a hexagonal ivory colored cake that she loved, which had white sugar roses and hydrangeas. The four tiers of red velvet cake have a raspberry buttercream filling and a thin layer of raspberry preserves. Each tier is covered in an ivory fondant, a series of scrolls are piped in icing and then adorned with fondant drapes. I added some leaves to give the colors a contrast, and the base of the cake is surrounded by ivory fondant pearls.
This was truly was a white wedding, the cake was delivered through a blizzard!

This Christmas Cake is classic example of enriched bread that has been a staple of British holiday celebrations for many centuries. The cake is filled with an assortment of dried fruits, nuts, sugar fruits, spices and marinated over 6-8 weeks with a cupful of brandy. The cake is covered with rolled white fondant and topped with three red sugar paste Poinsettia flowers.

An ivory colored fondant wedding cake with three square tiers and decorated with floral design brush embroidery in white.
Starting by tracing a pattern onto the fondant, then with royal icing I pipe around the pattern towards the center of the design. Before this outline is dry I brush the outline with a damp paintbrush. Once it is dry I go back and pipe in veins on each of the leaves. It's a long process, requiring a steady hand, but just love the final effect.
Around the base of each tier I placed a string of small sugar pearls. The cake sits on a fondant covered cake board which has crystal feet.

Our bride chose a color theme of ivory and light pink, and we made a sugar flower arrangement to match her bridal bouquet. White and fuschia colored Cymbidium orchids are placed on top of the cake, encircled by white callas. The Callas ere brushed with a dash of petal dust to bring out the pink and blend with the softer ivory color of the cake.
The cake was red velvet and cream cheese filling with lemon coconut cake and passion fruit curd filling on the other tiers. The ivory fondant is surrounded by a pink fondant ribbon and pink pearls. I delivered the cake to Scotch Plains NJ.

They also frequently visit a holiday home in Arizona and are golf fanatics, so we built a golf cart cake based on their E-Z-GO buggy. Orange chiffon cake with orange curd filling is covered in an ivory fondant. A red and black golf bag made with sugar paste and a set of golf clubs are on the back of the cart, which also has NJ and AZ licence plates!

A red fondant ribbon surrounds each tier, and the chocolate fondant covered cake is topped with a bouquet of hand-made sugar flowers in different shades (dark red, light red, dark orange were the color palette), they included poppies, lilies, roses, buds, blossoms and leaves.

Hand-made sugar roses and daisies adorn this beautiful Bat Mitzvah cake for a celebration at the Orange Lawn Tennis Club in South Orange NJ. Petal dust give the flowers in each bouquet an extra sheen and helps blend the apricot, peach, orange and pink colors. The white fondant is surrounded at the base of each tier with an embossed green fondant ribbon. Inside there is chocolate fudge cake with Madagascar vanilla bean buttercream and Red Velvet cake with Cream Cheese filling. I piped a message "Mazel Tov" on the top tier.

For a 30th birthday I was asked to create a Mardi Gras theme cake. The bottom tier is vanilla cake with dark chocolate ganache and the top tier is chocolate fudge cake with a white chocolate ganache. The tiers are covered in light blue and purple fondant with stripes and pearls around the base. I have been wanting to make a shoe cake for months. This Cole Haan shoe made of "pastillage" (a modeling sugar paste which becomes harder, but should be handled with care because it dries so quickly and becomes brittle) sits on top of a chocolate fondant shoe box with red velvet cake and vanilla bean buttercream. The shoe had hand-painted gold accents and sugar pearls. Gold fondant ribbons lay on the cake board as if the shoe box was wrapped and has just been opened. The shoe cake was for a birthday party in Union NJ, the guest of honor told me she had a collection of thousands of shoes.

For a birthday party in the amazing Times Square Toys R Us store what better than a Puff the Magic Dragon 3-D Cake? Puff was made with layers of chocolate fudge cake and Oreo cream filling. The dragon is lying by the sea with his friend the birthday boy as Jackie Paper sitting beside him on the sand. The wings, flames and scales are all shaped from fondant and hand painted.
The wings were a challenge, we had to make sure they survived the trip to NY and stayed standing upright, and the same with the flames coming out of Puff's gaping jaws. We placed some extra fondant scales in different shades of green to support the base of each wing.
I loved delivering this cake, as I got to take my girls with me and ride the Ferris Wheel!

A 1980s theme birthday party called for a personalized Graffiti cake. The red velvet cake has strawberry cream and vanilla buttercream filling. The red fondant is embossed to look like a brick wall, it is then sprayed with many different colors, we left the spray cans as accessories.
The cake is topped with a pair of glasses (you can even see through the isomalt lenses), a boom-box (remember those?) and we later added a golden chain for some extra bling!

A beige fondant is wrapped around the cushion shaped cake, it also has ivory diamond fondant cut-outs that are each joined with a blue jewel. Three bows top the cake and each has a matching gem.

I was delighted to make this ivory wedding cake for a couple from Chatham NJ who were celebrating at the Crystal Springs Resort.
The three tier Red Velvet cake had a white chocolate ganache filling and was covered in fondant. Each tier was decorated with a white fondant ribbon and then topped with an arrangement of sugar roses and buds.
I wanted to add a few close ups of the roses, they turned out just right! Each rose has a deep ivory center, around which I paste individual sugar petals. The rose is built up over time after each layer of petals has been shaped and dried.
The berries are made of a greenish yellow sugar paste inserted onto a floral wire, several of which are bound together to create a mini-bunch. Once the roses were set on the top tier, I inserted the buds to add a final touch.
