Poppies and Lilies Wedding Anniversary Cake


We were commissioned to create a three tier chocolate cake for a 30th wedding anniversary party in Llewellyn Park, West Orange NJ. Almond Walnut cake and Dulce de Leche buttercream, and Chocolate Fudge with Callebaut Chocolate Ganache were the favorites they picked.

A red fondant ribbon surrounds each tier, and the chocolate fondant covered cake is topped with a bouquet of hand-made sugar flowers in different shades (dark red, light red, dark orange were the color palette), they included poppies, lilies, roses, buds, blossoms and leaves.

Blackjack Cake and Cupcakes with Poker Chips


This Blackjack theme cake is red velvet with a Madagascar vanilla bean buttercream filling and is decorated with playing cards and piles of poker chips. Fondant card suit cut outs and colored beads surround the cake.

An assortment of red velvet and chocolate cupcakes with vanilla bean buttercream are all topped with several black and white poker chips. We delivered the cake to the 3 Forty Grill in Hoboken NJ.

Roses and Daisies Bat Mitzvah Cake


Hand-made sugar roses and daisies adorn this beautiful Bat Mitzvah cake for a celebration at the Orange Lawn Tennis Club in South Orange NJ. Petal dust give the flowers in each bouquet an extra sheen and helps blend the apricot, peach, orange and pink colors. The white fondant is surrounded at the base of each tier with an embossed green fondant ribbon. Inside there is chocolate fudge cake with Madagascar vanilla bean buttercream and Red Velvet cake with Cream Cheese filling. I piped a message "Mazel Tov" on the top tier.

Mardi Gras Mask Cake


For a 30th birthday I was asked to create a Mardi Gras theme cake. The bottom tier is vanilla cake with dark chocolate ganache and the top tier is chocolate fudge cake with a white chocolate ganache. The tiers are covered in light blue and purple fondant with stripes and pearls around the base. A string of gold colored beads adorns the cake as well as shooting stars, fondant twists and beads on wire. The Mardi Gras mask is made of sugar paste, decorated with leaves and then is hand painted with gold accents. We delivered the cake to the Forum Lounge near Union Square in Manhattan NYC.

Cole Haan Shoe Cake and Shoe Box


I have been wanting to make a shoe cake for months. This Cole Haan shoe made of "pastillage" (a modeling sugar paste which becomes harder, but should be handled with care because it dries so quickly and becomes brittle) sits on top of a chocolate fondant shoe box with red velvet cake and vanilla bean buttercream. The shoe had hand-painted gold accents and sugar pearls. Gold fondant ribbons lay on the cake board as if the shoe box was wrapped and has just been opened. The shoe cake was for a birthday party in Union NJ, the guest of honor told me she had a collection of thousands of shoes.

Puff the Magic Dragon Cake


For a birthday party in the amazing Times Square Toys R Us store what better than a Puff the Magic Dragon 3-D Cake? Puff was made with layers of chocolate fudge cake and Oreo cream filling. The dragon is lying by the sea with his friend the birthday boy as Jackie Paper sitting beside him on the sand. The wings, flames and scales are all shaped from fondant and hand painted.

The wings were a challenge, we had to make sure they survived the trip to NY and stayed standing upright, and the same with the flames coming out of Puff's gaping jaws. We placed some extra fondant scales in different shades of green to support the base of each wing.

I loved delivering this cake, as I got to take my girls with me and ride the Ferris Wheel!

The Graffiti Cake is a Lie!


A 1980s theme birthday party called for a personalized Graffiti cake. The red velvet cake has strawberry cream and vanilla buttercream filling. The red fondant is embossed to look like a brick wall, it is then sprayed with many different colors, we left the spray cans as accessories.





The cake is topped with a pair of glasses (you can even see through the isomalt lenses), a boom-box (remember those?) and we later added a golden chain for some extra bling!

Cushion Cake Fit for a Queen


I was really pleased how this specialty cake turned out for a birthday party in Springfield NJ. The cake had alternating layers of vanilla and chocolate fudge cake with chocolate raspberry cream filling. A beige fondant is wrapped around the cushion shaped cake, it also has ivory diamond fondant cut-outs that are each joined with a blue jewel. Three bows top the cake and each has a matching gem.

Ivory Rose Blossoms Wedding Cake



I was delighted to make this ivory wedding cake for a couple from Chatham NJ who were celebrating at the Crystal Springs Resort.

The three tier Red Velvet cake had a white chocolate ganache filling and was covered in fondant. Each tier was decorated with a white fondant ribbon and then topped with an arrangement of sugar roses and buds.






I wanted to add a few close ups of the roses, they turned out just right! Each rose has a deep ivory center, around which I paste individual sugar petals. The rose is built up over time after each layer of petals has been shaped and dried.









The berries are made of a greenish yellow sugar paste inserted onto a floral wire, several of which are bound together to create a mini-bunch. Once the roses were set on the top tier, I inserted the buds to add a final touch.

Thomas and Friends Birthday Cake


We had a lot of fun making this Thomas the Tank Engine cake for a birthday party in Livingston NJ. The two tiers were both vanilla cake with strawberry buttercream filling, covered in a sky blue fondant. A railway track goes around each tier, trees and clouds also decorate the cake. Thomas, James, Percy, and Duncan ride the rails, while Mr. Topham Hatt watches over the four train friends.

Wonky Candy Theme Bat Mitzvah Cake


We baked a gluten free cake for a Bat Mitzvah party at the Elk's Club on Washington Street in Hoboken NJ. The candy theme was incorporated in the cake design and attached you can see the original sketch. This three tier topsy turvy cake with chocolate fudge, vanilla and red velvet flavors has Madagascar vanilla bean buttercream filling. An assortment of candy and lollipops decorated the cake, which was topped with a fondant monogram.
